If you’re like me, you find any and every excuse to incorporate summer fruits into your recipe repertoire (give me a salad and I’ll throw grapefruit segments or pineapple slices in there – yum!). That’s why I’m so excited to show you this refreshing seasonal take on the classic burrata app. Peaches are one of my favorite summer fruits because of their versatility (get my peach breakfast smoothie recipe here) and when paired with burrata’s creamy consistency, their juicy texture is a refreshing and healthy alternative to bread. I’m a huge fan of entertaining during the summer and hate being stuck in the kitchen (um, and suck as cooking, as we know!), so the ease of this recipe is an instant winner. Best served fresh, this delicious app only takes a few minutes so you can get back to the party in no time.

Step 1: Slice your peaches in half. You can adapt this recipe to feed a few close friends or a whole dinner party, but I always make at least 4.
Step 2: This is totally optional, but if you have time or are feeling a little fancy, place your peach halves in a baking dish and drizzle with a bit of olive oil and a pinch of good sea salt. It makes the sweet flavor stand out, but it’s also perfectly good on regular fresh peaches. If you’re going the route of this extra step, toss them in your oven at 350 degrees for about 20 minutes.
Step 3: Chop some rosemary for your garnish. Once your peaches are ready, spoon a generous dollop of burrata cheese onto each half, and sprinkle some rosemary on top.
