Breakfast On The Go!

Clean eating is important to me: I feel my best when I eat consciously and healthily, but I also have a huge appetite and need things to taste yummy! This simple chia seed pudding takes two minutes to make and is a brilliant breakfast combination. It’s super nutritious, as chia seeds pack a punch of Omega-3s, protein and fiber. You’ll feel full and your metabolism will be speeding along for the rest of the day.

Ingredients:

1 cup coconut milk

1/4 cup chia seeds

a drizzle of honey

granola

fruit to garnish

1. Mix your coconut milk (any non-dairy milk will do, but coconut adds a nice richness and flavor to it), and chia seeds with a drizzle of honey, and refrigerate for at least four hours. I often do this step the night before, so everything is ready for breakfast the next day.

2. Pour your chia pudding into a mason jar if you’re taking it in the car to work (as i often do, when i’m running late!). Garnish with anything you like: granola, berries, sliced banana etc. It’s as simple as that!
