Quaran-team Snack Inspiration

Do loaded nachos count as a mid week snack? Absolutely. I’ve borrowed this recipe from my friend What’s Gaby Cooking as you all loved her gnocchi so much. These nachos are so delicious and a really good way of using up any leftover cheese; the perfect quaran-team snack inspiration. After a busy day running round after a toddler, cooking, playing games, working, doing the laundry, tidying the house and watering the garden I could absolutely demolish a plate of these.

Loaded Nachos by What’s Gaby Cooking

-1 bag Tortilla Chips

-2 cups grated cheese. Cheddar and Pepperjack are the best but any grated cheese would work

-1 cup corn (off the cob)

-1 cup shredded chicken (optional)

For the Garnish:

-sliced jalapeños, peppers, green onions, sour cream, salsa, guacamole, pico de gallo, extra cheese

Instructions:

Pre-heat the grill. Arrange the tortilla chips on a baking tray and evenly distribute the cheese, corn and chicken. Make sure each nacho is coated! Place the baking sheet under the grill until the cheese melts. Once melted, remove from the grill and add little spoonfuls of garnish on the top. Serve immediately.
