DIY: Edible Flower Popsicles

I cannot believe it’s already September! Where did the Summer go?? As much as I’m excited about Autumn, I spent the Labor Day weekend enjoying one of my favorite sunny treats and I took full advantage of the end of August sunshine. These gorgeous flower popsicles are as easy to make as they are yummy to eat. They’re perfect for a relaxing day poolside or to share with friends and family. These pops are almost too lovely to eat. Almost. And they’re even Honor-approved!

Ingredients:

For the popsicles:

2 cups coconut water

1/4 cup rose syrup

Edible flowers

Popsicle molds with wooden sticks

For the rose syrup:

1/2 cup sugar

1/2 cup water

1 teaspoon rosewater

Directions:

  1. Combine the sugar and water over medium heat, stirring until all the sugar dissolves. Simmer for another 5 minutes. Take off heat and add the rosewater. Cool completely.
  2. Mix together the coconut water and rose syrup. Set 3 to 4 flowers in each popsicle mold and fill with coconut water mixture.
  3. Put tray into the freezer until the popsicles are completely frozen. Once froze, pop them out of the mold and enjoy on a warm summer’s day!
