There’s nothing quite as English as having a Pimms Cup in summer. When I was at university, we used to come back for the Summer semester and hit the pub, order our first Pimms and watch the cricket. It was about as English as anything gets, and every time I sip this cocktail, it takes me right back to those happy memories. Pimms is a gin-based liquor that has hints of herbs and spices, giving it a totally unique flavor that is popular in England (but a little harder to find here in the states). It isn’t typically stocked in every grocery store, but you can find it at specialty liquor shops and it is totally worth it to have some on hand, especially during summer. A Pimms Cup is the perfect cocktail to serve in the summer. You can make a big jug of it, mixed with lemonade, and throw in fresh mint, sliced strawberries or orange – it’s the perfect alternative to wine or beer during a BBQ or beach picnic. But as always on Front Roe, we’re doing things with a twist! I tested out some alternative Pimms recipes and fell in love with this one. I recommend serving these with some olives – the salty/sweet bite is to die for.
Ingredients:
Makes 2 servings
4 oz. cucumber vodka or plain vodka
2 oz. Pimms No. 1
Grapefruit soda (I like Sanpellegrino the best!)
1 Persian cucumber, cut into spears
Steps:
1) Fill your glasses with ice. Divide the vodka and Pimms between the two glasses evenly.
2) Top off with grapefruit soda.
3) Garnish with cucumber spears.
