In case you haven’t already seen them all over the internet, avocados are trending! Not only are they super yummy, they’re supposedly as nutritionally potent as mother’s milk, meaning you could live off them for a while if you had to (and sometimes I eat so many I feel like I do!). but they go perfectly on almost everything – with eggs, on salads, in sandwiches, as guacamole, and especially on toast. Avocado toast is so easy and fast to make when you’re on the go.
This style of avo toast is topped off with radishes which add texture and crunch, plus they’re super high in Vitamin C and great for detoxing your body. I also use cayenne pepper and lemon to add some kick. Read below for my simple recipe! This recipe makes 2 servings.
Bunch of radishes
1 loaf artisan bread (this one is whole grain w/flax seeds, but pick your fave or experiment with different types)
Juice of 1/2 lemon
Extra virgin olive oil
1) Slice your bread in a diagonal fashion (this creates longer slices and looks more elegant!), toast to your liking.
2) Toss thinly sliced radishes in olive oil, lemon juice, salt and pepper. Repeat the same step with mashed avocado.
3) Spread mashed avocado onto your bread and sprinkle with cayenne pepper to taste. Pile on radish mixture.
4) Optional to drizzle on more oil, lemon or salt/pepper.
